This classic Tie Guan Yin, also called Iron Goddess of Mercy, was made in Anxi, Fujian, where this type of tea originated. This region typically produces very lightly oxidized Tie Guan Yins. This tea is a lovely example of the fresh, floral flavors that Anxi is known for.

Brewing Instructions
We recommend rinsing the tea–a quick brew that is then discarded–to allow the leaves to open up. This tea can be brewed 8-10 times in the gong fu style. Be sure to compare each steep (they will vary a lot!). Alternatively, this tea can also be brewed in a mug. We suggest using an infuser with a large opening to allow the leaves as much room as possible to open up.
